Il Villaggio Mozzarella, Provolone & Roasted Vegetable Sandwich
  • 1 small eggplant, sliced thin
  • 1 small zucchini, sliced thin
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. extra virgin olive oil
  • 8 oz. Il Villaggio® Fresh Mozzarella, sliced
  • 8 oz. Il Villaggio® Provolone, sliced
  • 1 roasted red pepper
  • 8 oz. arugula, cleaned salt and black pepper
  • 1 loaf Italian bread

  1. Spread the sliced eggplant and zucchini on a baking sheet and brush on a small amount of the balsamic vinegar and olive oil. Season to taste with salt and pepper, and bake in a 350°F. oven for 15 minutes or until wilted but not browned.
  2. Assemble sandwiches by layering ingredients on the bread and season with additional Balsamic vinegar, olive oil, salt and pepper.
